My all-time favourite ice cream flavour is black cherry. Back in the day, fresh cherries were expensive and really hard to find in Mexico, so traditional ice cream shops and parlours did not carry that flavour.  However, there was a more contemporary family-owned chain called Helados Bing, which had a delicious black cherry choice on their ice cream flavours list. A chalupa is a small boat, usually rowed or poled. In the 16th century, when Spanish conquerors arrived to Central Mexico, they admired how the areas surrounding Tenochtitlan (today's Mexico City downtown area) had been developed into a system of gardens and farming parcels, seemingly floating on the lakes, interconnected by numerous small boats that they called chalupas.
