French pancakes (crêpes) arrived in Mexico in the 19th century, shortly after the country became independent; the thin pancakes were established as a part of Mexican cuisine during the short reign of Emperor Maximilian I (1864-67). One filling that the emperor favoured was huitlacoche (corn smut), and this choice has remained popular until modern times.
