In Mexico, a turkey dinner is a popular choice for a Christmas menu, especially in urban areas.  For others, though, stew-like dishes are usually the norm, such as chicken in mole. Two years ago, I shared a traditional Mexican recipe for turkey stuffing with ground meat; this time, I tried a vegan version by using a plant-based ground meat substitute, and the result was excellent.
