Beef Strips with Veggies

This is a quick stir-fry  dish, perfect to deal with a weekday dinner rush.  Some steak, pantry staples, and available veggies is all that is needed.  In my case, I had a couple of zucchini and some hot wax peppers; other veggies could be green beans, cabbage, bell peppers, etc.

Beef Strips with Veggies – Tiras de res con verduritas

Printable recipe:  Beef Strips with Veggies

Ingredients (for four portions)

1 lb (454 g) beef steak, such as sirloin; cut into strips
1 white onion; peeled
2 potatoes; cooked, peeled and cubed
2 medium zucchini; washed
4 fresh peppers, mild, spicy, or a mix; washed
2 tbsp oil
Salt and black pepper, to taste
Worcestershire sauce, to taste (homemade, or from bottle)

Trim ends of zucchini, cut in half lengthwise, and slice; slice onion; remove stems and seeds from peppers, and cut into strips:

Warm up oil in a large frying pan or iron skillet, over medium heat; add meat and cook, flipping to brown strips on both sides (photo below, left).  Push meat to the edge of the pan, and add onions and peppers in the middle (photo below, right):

Continue cooking for a couple of minutes, then mix to incorporate ingredients in the pan (photo below, left).    Add zucchini and cooked potatoes (photo below, right):

Stir to incorporate all ingredients, seasoning with salt and pepper, to taste (photo below, left).  Cook for another two minutes, then finish with a splash of Worcestershire sauce (photo below, right):

Serve hot, with bread or corn tortillas on the side:

Far from complicated or lurid, this simple platter is still not destitute of rich flavours, and will satisfy the whole family.  Worcestershire sauce is a common seasoning to have in the modern Mexican kitchen; in other posts, I have mentioned that this sauce has been in Mexico at least since the 1920s, included in recipes bequeathed from generation to generation, such as Caesar salad (invented in Tijuana), steak tacos, and more recently, in Micheladas (seasoned beer), and on pizza!
