Last year, I learned that October 4th is celebrated as National Taco Day in the USA. I thought that, to acknowledge the holiday, I could make a list of the posts I had, dictated by a taco-theme (click here to visit that post.) It was fun to see my year of tacos all together, so I am sharing the following list of my taco-related posts, since then (click on highlighted text to visit the posts):
Taco Stand Nostalgia – October 17, 2018
I was reminiscing about a Mexican stand of tacos al pastor (shepherd style tacos), where seasoned layers of pork meat rotate next to a vertical grill (resembling a top, or “trompo” in Spanish), so this is what I did that day at home in Canada: “All I found in the fridge was leftover pork loin roast, so that had to do for this meal; I chopped some up and re-heated it in a pan with a little oil. Then, I assembled my taco platter with warm corn tortillas filled with: the pan-fried loin; finely chopped onions and cilantro; a scoop of salsa, one taco with green and the other with red; and a squirt of lime juice. I had no pineapple, but I placed them on paper squares cut out from a bread bag, and served them on a plastic lid, for effect”:
I concluded with “I am certain I will revisit the topic and post a recipe for a homemade classic taco al pastor, as soon as I figure out how to go around the trompo fixture.” I am almost done with this task, so I will be posting about my findings in a few weeks.
